A new tasty treat is vying for the cupcakes top spot this year. Just in time for Easter. Could it be the coconut macaroon looks like the grass in your Easter basket. Or maybe we just love the outlandish unfoodly colors they come in--hot pink, sunshine orange, snowball white, and neon green.
Macaroons are a classic French dessert. The first macaroons were an egg white and almond paste variety called almond meringues. The crisp crust and soft interior reminds me of the fabulous amaretti cookies so delicious with a latte.
Popular for the observation of Passover because they need no flour or leavening, the Italian Jews developed the coconut macaroons.
